Chai Spiced Winter Squash Soup with Bacon

We had a very good winter squash year in our garden.  We’ll be eating the bounty for months to come in a variety of ways.  I have to admit my favorite way is in soup with coconut milk.  I saw a recipe for roasted winter squash salad with chai inspired spices recently and my goodness sounded like a great idea for soup.  Hence, Chai Spiced Winter Squash Soup with Bacon was born.  This is a hearty and filling soup, don’t let the pureed nature of it fool you into thinking it’s light – it’s nutritionally dense with fat and protein.  This soup along with a salad will make a filling lunch to fuel your afternoon (which is exactly how I’ve been eating it this week).

Chai Spiced Squash Soup with Bacon

Chai Spiced Winter Squash Soup with Bacon
  1. 3 Cups Cooked & Pureed Winter Squash (Pumpkin, Butternut, Hubbard, etc.)
  2. 2 Cups Water (more or less to taste)
  3. 1 2/3 Cups Full Fat Coconut Milk
  4. 1/2 teaspoon Kosher Salt
  5. 1/4 teaspoon Ground Cinnamon
  6. 1/4 teaspoon Ground Black Pepper
  7. 1/8 teaspoon Ground Ginger
  8. 1/8 teaspoon Ground Cardamom
  9. 1/8 teaspoon Ground Cumin
  10. 8 Slices Bacon, cooked until crisp
  1. In a soup pot, whisk together the squash and coconut milk, adding water as necessary to make a combined soup mixture to your desired thickness. Stir in the spices and cook over low heat until warmed through. Divide the soup among 4 bowls and crumble 2 slices of bacon on top of each bowl before serving.
  1. Nutritional breakdown per serving: 402 calories, 40 grams carbs, 24 grams fat, 12 grams protein

    This looks awesome!! I think the combo of chai and squash would be amazing. I suspect a lazy person such as myself without ground cardamom could get away with steeping a chai tea bag in a pot of hot coconut milk rather than using the spices ;)
